Easy Chocolate Chips Cookies

These chocolate chips cookies are a little chewy type. But the plus point is: easy to prepare, not much time required. Not only for a snack, make them for expected coming guests, for picnics, or, as some quick bites to bring along during long journey.

I got the initial recipe based from somewhere which I can’t trace anymore to give credit. But then, I modified it quite a fair bit for an easy cookie baking manner.   

Easy Chocolate Chips Cookies
1 1/2 cup AP flour or rose flour  (used organic AP flour here)
1 tsp baking soda  1/2 tsp baking powder + 1/2 tsp baking soda
pinch of salt
80 g salted butter, soften at room tempurature
1/4 cup caster sugar + 1/4 cup soft brown sugar
1 egg, beaten
1/2 tsp good vanilla extract
1/3 cup chocolate chips  (used 1/6 cup white choc + 1/6 cup milk choc chips)*
* - for choc chips lovers can increase to 1/2 cup, cookies would be sweeter.
Yield: large 17~19, small 30~32

Firstly, mix plain four, baking soda and pinch of salt together with a hand whisk.

Use a hand whisk/wooden mixing spoon, whisk/beat soften butter in a mixing bowl. Add in sugar in 2, 3 portions whisking with butter. (Not necessary to whisk/beat till light and fluffy. But if you want to, go ahead.) Add in beaten egg & vanilla and whisk till combined.

Add all the flour mixture into the mixing bowl, gently mix to the butter-sugar-egg mixture by hand. Mix in all chocolate chips and form a dough. (No extensive kneading.)

Scoop 1 TBsp (or 1/2 TBsp for smaller cookies) of the dough, round to a ball, place it onto a lined baking tray. Leave some space in between. Use your palm flatten the cookie ball.

Bake in a pre-heated oven at 175°C for about 18 minutes (smaller cookies: about 16 minutes). Cool on wire rack completely before storing in an airtight container.

Can age 1 day before consuming for a deeper flavour.

These cookies are not only simple but also non-oily, not extremely sweet, and non-salty too. Have a bite with a glass of warm milk or warm cocoa. Nice day.

P/S: My younger bro enjoyed it a lot and he wondered where did I buy these choc chips cookies. He misunderstood as I wrapped in a plastic gift bag. My sis-in-law pointed out these were my homemade cookies.

PP/S: Baked a batch for my little nephew. He loved it.

Update: Another batch with 1/3 cup almond meal + 1 1/6 cup low protein wheat flour, 1/2 cup of chocolate chips, the rests remained the same, making into some 11 huge chocolate chips cookies.
