Meatball Salad


I got some left over homemade bread and I don’t wish to waste it. I have a friend who is really crazy over Ikea’s meatballs. Rang me a thinker for making into this simple meatball salad.

Meatball Salad
meatballs:
225 g beef mince
2/3 cup breadcrumbs (crumbed from my honey oatmeal bread)
1/2 yellow onion, chopped
2 bunches flat-leaf parsley, chopped
1 egg
salt & coarse black pepper
salad:
5 leaves green salad, torn 
1 large tomato, wedged
sauce:
1.5 TBsp cream sauce mix
2/3 cup water
2 TBsp thickened cream
Servings: 3

1. Mix and knead beef mince, breadcrumbs, chopped onion, chopped parsley, egg, with salt & pepper. (I further hit/smash the meat mixture against the bowl hard for a couple of times.)

2. Shape to meat balls. Place them onto a pre-greased baking dish. Spray the meatballs with some cooking spray. Bake in a pre-heated oven at 200°C for 20 minutes (my meatballs were quite large; smaller meatballs then bake for 15 minutes).

3. Meantime, prepare the sauce as per packet's directions.

4. Serve warm meatballs with chilled salad and top it with sauce, sprinkle with some extra chopped parsley. Of course you can serve it with your favourite chili sauce and mustard too.

For those who do not take beef, can change it to chicken, turkey, or pork, or even a combo. For nuts lovers, just sprinkle with extra toasted chopped walnuts or pecans.
