Tom Yum Hotpot


Last night, I had Japanese hotpot. Tonight, how about using almost the same ingredients for a Thai one? Tom yum hotpot is very easy. Anyone can make it at home.

Tom Yum is Yum Yum! Excuse the pun. Hahaa. Can’t help it. It’s spicy hot & savory sour. It goes extremely well with rice or just on its own.

Tom Yum Hotpot
(I)
6 assorted fish balls & fishcakes
3 medium sized fresh prawns
1 tomato, cut into 6 wedges
3 baby corns
4 sweet green peas
2 button mushrooms, halved
1/3 block smooth tofu, halved
(II)
1.25 cup water
2 stalks lemon grass, bottom crushed
1 cm galangal, crushed
1 green chili, deseeded, widely cut & crushed
(III)
2 kaffir lime leaves
1/2 to 3/4 TBsp instant tom yum paste (I use Mae Pranom brand)
1/2 tsp fish sauce (or to taste)
1/2 tsp brown sugar (or to taste)
dash of white pepper            
(IV)
1/2 small onion, cubed
1 lime 
1. In a claypot, add (II) the water, lemon grass, galangal & chili, high heat to bring to boil, put on the lid, turn to low heat to simmer for 5 to 7 minutes.
2. Stir in instant tom yum paste. Add in the rest of (III) kaffir leave, fish sauce, sugar & dash of pepper. (Fish sauce is salty. Don’t add too much. Can adjust the taste later on.)

3. Scatter tomato wedges to the tom yum soup first. Add the remaining ingredients of (I),  where harder to cook ones to add first (button mushrooms, fish balls/fishcakes, prawns, baby corns). Turn the prawns to cook both sides. Add those faster to cook last (sweet peas & smooth tofu the last). Bring to boil, simmer a minute or two.

4. Turn off the heat, scatter onion & squeeze lime juice on top. Serve while hot. ## Do garnish with coriander. (Sorry, not in my fridge, so I omit it.)

This is a thick, strong, spicy & sour tom yum soup base which I fond of. For a milder tom yum, can increase another 1/3 to 1/2 cup of water. It tastes even better with a few slices of squid meat. And various combination of ingredients can be done.

If you have it on an individual portable stove, after making the tom yum soup, lower the heat you can cook whichever you want to eat first, just like steamboat.
