Strawberry Muffins


Lovely mouthwatering strawberry muffins!

Muffins are my comfort food. Just love doing muffins. So easy and so delicious.

Strawberry Muffins
(I)
1 cup AP flour
1/4 cup caster sugar
1 tsp baking powder
1/5 tsp salt
(II)
1 large egg
1/3 cup milk with 3/4 tsp vinegar (or plain yogurt)
1/3 cup corn oil (or melted unsalted butter)
1/2 tsp vanilla
(III)
10 fresh strawberries, diced
2 TBsp strawberry milk chips
Yield: 6           

In a large mixing bowl whisk or stir all (I) till combined. Make a well in the centre.

In a separate bowl, use a hand whisk, whisk all (II): i.e. egg & vanilla, and then add in the vinegar added milk & oil, whisk till just combined.

Pour all egg mixture to the well of the flour. Use a spatula gently mix or just moisten the flour with the liquid. Important: Do not over mix it, little lumps are alright.

Gently fold in about 2/3 of the strawberries & all the strawberry milk chips.

Scoop equally to lightly greased muffin pan (or muffin liners). Place on top a few pieces of the remaining diced strawberries.

Bake at 200°C in a pre-heated oven for 20 minutes or until inserted toothpick comes out clean.

Remove from pans and cool on wire rack.

These muffins were very soft, moist and simply yummy. The strawberry milk chips melted within incorporating more strawberry flavour & bringing sweetness to it.


One muffin in a time was just not enough... ahem I just took two. >"<)
